The paradoxical De Bortoli Noble One is a unique Australian experience that confounds conventional thinking. Based on estate-grown semillon grapes, highly viscous botrytised sweet juice is batch vinified with specially selected yeasts, followed by 12 months maturation in French oak barriques.
It is further matured in bottle for a year before release, and recognised as the benchmark Australian dessert wine, with intensely fresh apricot, barley water and honey aromas and flavours, underlying savoury oak viscosity, richness and mineral length..
